Ingredients:

  • 2 large sweet potatoes, peeled and cut into wedges
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 tbsp fresh parsley (optional, for garnish)

 

Lemon Tahini Dressing:

  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp maple syrup or honey
  • 1 tbsp water (to thin the dressing)
  • Pinch of salt

 

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato wedges in olive oil, paprika, salt, and pepper.
  3. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  4. While the potatoes are roasting, whisk together all dressing ingredients in a bowl.
  5. Once the sweet potatoes are crispy and golden, drizzle the tahini dressing on top and garnish with parsley.
  6. Serve warm as a side dish or top with chickpeas for a complete meal.

 

Tip: Add a sprinkle of pumpkin seeds or hemp seeds for extra protein!
