Crispy Roasted Sweet Potatoes with Lemon Tahini Dressing
Ingredients:
- 2 large sweet potatoes, peeled and cut into wedges
- 1 tbsp olive oil
- 1 tsp paprika
- Salt & pepper to taste
- 1 tbsp fresh parsley (optional, for garnish)
Lemon Tahini Dressing:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp maple syrup or honey
- 1 tbsp water (to thin the dressing)
- Pinch of salt
Instructions:
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato wedges in olive oil, paprika, salt, and pepper.
- Spread them on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
- While the potatoes are roasting, whisk together all dressing ingredients in a bowl.
- Once the sweet potatoes are crispy and golden, drizzle the tahini dressing on top and garnish with parsley.
- Serve warm as a side dish or top with chickpeas for a complete meal.
Tip: Add a sprinkle of pumpkin seeds or hemp seeds for extra protein!
